In antiquity in the Mediterranean basin pizza was a very poor dish made with lard, cheese and basil (sometimes with fish scraps) spread across all regions.
Pizza as we know it arrived in 1889 when the Neapolitan chef Raffaele Esposito created the Margherita pizza (tricolor) in honor of Queen Margherita of Savoy: tomato, mozzarella and basil to honor the Queen.
